As the great Carrie Bradshaw once said “Hello Lover!” I too am proclaiming my love. But unlike Carrie, my love is not reserved for Manolo Blahniks, rather for this amazing carrot and beetroot salad.
The sun was setting, the waves were crashing on the shore, and me and this salad were having a love affair that, I hope, will last a lifetime.
Carrot + Beetroot Salad Recipe
- 1 carrot shredded
- 1 beet shredded
- handful of mint, finely shopped
- 1 spring onion, chopped
- small piece ginger, finely grated
- juice from one lemon
- 2 teaspoons honey
- 1 jalapeno pepper, finely chopped (if you want that extra kick!)
Mix together the mint, onion, ginger, lemon, honey and jalepenos in a small bowl to make the dressing. Add to the carrots and beets.
Make the letter L for love, with your mixture.
Eat. Enjoy. Repeat.
